Our hotel welcomed one of the very best chef in Spain, Ángel León, who shared a masterclass with the students of the Escuela de Hostelería de la Fundación Cruzcampo, currently attending both classes and practices in our facilities, while the Foundation refurbishment works end. The prestigious chef academy, exclusively devoted to live training and gastronomy, has already become a flagship school in Andalusia.
For an hour and a half, Ángel León shared with the trainees his vision beyond the profession: “Devote yourself to this art is a labor of love, to make other people happy.”
The distinguished Andalusian chef, who already treasures 3 Michelin star awards in Aponiente plus one Michelin star in Alevante, recalled his beginnings under the attentive gaze of all the students: “When I started my training in the chef academy, I failed all the exams during the first three years, my work had such a poor quality… Back then, to be summoned by El Bulli or Martín Berasategui was everything. But I understood gastronomy otherwise. Gastronomy’s ways are infinite. The good chef uses love to elaborate great dishes. This is what distinguished you from the rest. Sometimes you will see that the simplest thing is nowhere to be seen… For example something as typical as good fried eggs and fries… as we are surrounded by ceviches and tartares.”
The frenetic growth of tourism in Spain, and especially in Andalusia, has led to an important increase of gastronomic demand in the form of bars and restaurants of all kinds. This is why this chef recommended the students “to train hard, travel, learn the language of other countries’ kitchens, to acquire the knowledge and the experience of the most rewarding profession in the world.”
